When I need an easy win for a grill night or just a Tuesday dinner, I make these turkey skewers. They feel a bit special, but come together fast. No drama.
The “secret” is the marinade. Mix olive oil, lemon juice, garlic, and a handful of herbs (oregano, thyme… whatever you’ve got). Salt, pepper. That’s it. It keeps the turkey tender and adds that fresh, lemony kick. Honestly, it’s pretty foolproof.
I cut turkey breast into bite-size pieces and thread them with colorful bell peppers, red onion, and zucchini. Same-size chunks so they cook evenly. The veggies bring sweetness and crunch, and on the grill they caramelize beautifully. Colors really pop.
Cook hot and quick. You want juicy turkey with a little char on the edges — that “just-right” grilled taste. If it looks dry, you went too far. (Happens. Next batch, pull sooner.)
These are my go-to when I want something healthy and protein-rich that still looks party-ready. Serve with a simple yogurt–garlic sauce (yogurt, grated garlic, lemon, pinch of salt) or next to a couscous salad. Warm flatbread doesn’t hurt either. Spoon extra sauce on top — trust me, you’ll want more.
I’d say make a few extra skewers. Leftovers disappear fast.

In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt and pepper.

Add turkey pieces, mix well, cover and refrigerate for at least 30 minutes.
Assemble and grill

Skewer ingredients
Thread marinated turkey, bell peppers, onion and zucchini alternately onto skewers.

Grill
Grill over medium heat for 12–15 minutes, turning occasionally, until turkey is cooked through and vegetables are slightly charred.
Note: If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
