This is my go-to when I want dinner to feel healthy but not fussy. Flaky salmon, roasted veg, one pan. That’s the whole story.
I toss broccoli and cauliflower florets with a little olive oil, salt, pepper—maybe a squeeze of lemon if it’s around. Onto a sheet pan they go. Five minutes head start, then the salmon fillets join the party. Bake it all on the same tray so the flavors hang out together. And yeah, you’re washing just one thing. Small victory.
Keep the fish simple — salt, pepper, tiny drizzle of oil. That’s it. You don’t need much—salmon brings its own thing. Roast till the veggies get a few caramelized edges and the salmon turns tender and just-opaque in the center. That’s where it’s perfect, honestly.
It’s bright and fresh-smelling, ticks the boxes — omega-3s, plenty of veg, cozy but not heavy. Good for a busy Tuesday. Or a lazy Sunday lunch. I’d say add lemon wedges at the table and a quick yogurt sauce if you like. Trust me, make extra — leftovers are great cold with a bit of couscous or greens.

Baking the salmon and vegetables

Preheat oven
Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

Prepare vegetables
Place broccoli and cauliflower florets on the prepared baking sheet. Drizzle with olive oil, sprinkle with oregano, salt, and pepper, then toss to coat evenly.

Add salmon
Arrange the salmon fillets among the vegetables. Season the salmon lightly with salt and pepper and drizzle with a little olive oil.

Bake
Bake for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender with golden edges.

Transfer to plates and serve immediately with lemon wedges if desired.
Note: You can finish with a drizzle of lemon juice or sprinkle of grated Parmesan before serving for extra flavor.
