This is one of those starters that pretty much cooks itself. I grab medium-thick asparagus, trim the ends, and wrap two or three spears with a single strip of bacon—snug, not tight. Onto a hot sheet they go, no crowding, and into a hot oven. The bacon renders and crisps, the asparagus softens and stays a little snappy, and the kitchen starts smelling like someone’s about to “taste test” half the tray (guilty).
When they come out, I give them a tiny squeeze of lemon and a twist of pepper so the salty-smoky thing doesn’t feel heavy. They’re great as a side or a pass-around bite, and yes, they disappear fast. To fancy them up, glaze with a touch of maple or honey right at the end, or rain over some shaved Parmesan. Still simple, a little messy—and hard to stop at one.

Preheat oven
Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Wrap asparagus
Take 3–4 asparagus spears and wrap them together with a slice of bacon. Repeat until all asparagus is wrapped.

Season and drizzle
Place the bundles on the baking tray, drizzle lightly with olive oil, and season with salt and freshly ground black pepper.

Roast
Roast in the oven for 12–15 minutes, or until the bacon is crispy and the asparagus tender. Turn bundles halfway through for even cooking.

Serve
Serve warm as an elegant appetizer or side dish, perfect for gatherings or a simple family dinner.
Note: Use thin asparagus spears for even cooking and slightly thicker bacon slices for a perfect balance of crispiness and tenderness.
