Guacamole’s been around forever — like, Aztec times forever — and you can see why. Ripe avocados, a few fresh bits, mash-mash, done. Simple, but it hits. Honestly, it’s the one bowl everyone crowds around.
Here’s how I do it. I scoop the avocados into a bowl and mash them mostly smooth, but leave some chunks so every bite has a little texture. Not baby food. A good squeeze of lime goes in first so it stays bright and green. Then a pinch of salt — don’t be shy, it wakes everything up.
After that I fold in diced tomato, finely chopped onion, and cilantro (coriander). Tiny jalapeño if you want a nudge of heat; skip it if not. Some people add garlic; I’m team “small half-clove, minced super fine,” but it’s optional. Taste, nudge, taste again. That’s the whole game.
What you get is creamy + fresh + a little zippy. Kind of like a small vacation for your mouth. I’d say serve it right away with warm chips or spoon it on tacos, eggs, whatever’s around.

Preparation
